Let’s start by preparing ingredients for the broth. Cut off the top green part of the leek and clean the leaves. Save the white part for later use. Peel 1 carrot and cut it in half. Tie up the carrot and leek together with cooking twine. Attach the bay leaves to 1 onion by sticking it with the cloves.

Let’s make the broth. Add 2 Liters water to a pot. Add the prepared vegetables. Add the pork to the pot as well together with the split peas.

Cover with a lid and bring it to a boil. Simmer for 1 - 1½ hour. Remove foam from time to time.

In the meantime let’s prepare some ingredients. Cut white part of the leek in desired slices. Cut carrots, onion, celeriac and potatoes in desired sizes. The amount of vegetables depends on personal preferences.

When soup is done simmering. Remove the vegetables. Take out the meat. Give the soup a quick stir. It will break apart the peas.

Add in the chopped potatoes, carrot and celeriac. Cover with a lid. In the meantime cut up the meat that you took out of the soup. Add the cut meat back to the soup together with the onions and leeks. Bring it to a boil and let it simmer for another 45 minutes.

After 45 min add dutch sausage or hot dogs to the soup and let it cook for 15 min. Remove the sausage from the soup and cut it up. Add it back to the soup. Season soup to taste with salt and pepper. Serve soup same day or wait for the next day for a more flavorful and thicker soup.

Enjoy! ✿◕ ‿ ◕✿

TIPS & NOTES
✿ If you don’t feel like making the broth you could use beef or chicken bouillon when cooking the peas.
✿ For a smokier soup use smoked meat or another common meat to use to make erwtensoep is ham bone.
✿ Usually dutch sausage (rookworst) is added to the soup. If you can’t find it like me substitute it with hot dogs.
✿ The soup will be thinner on the 1st day. If you like your soup thicker and more flavorful, let the soup sit overnight.
