✿ 250 - 350 Grams Squid/Octopus
✿ Salt & Pepper
✿ Shaoxing Wine
✿ Kimchi
✿ 1 Tablespoon Gochujang
✿ 1 Teaspoon Soy Sauce
✿ 1 Tablespoon Vinegar
✿ 1 Teaspoon Sugar/Honey

Prepare The Ingredients
Clean Squid and rinse thoroughly. Cut into bite-sized pieces. Massage lightly with a pinch of salt (or a bit of vinegar or Shaoxing wine) to remove odor. Rinse again if needed. Pat dry and set aside.
Cut onion into thin slices. Mince garlic. Cut kimchi into bite-sized pieces. Slice spring onions into 1–2 inch lengths.
Cook
Heat a pan over medium-high heat. Add a bit of oil, then sauté the onion and garlic until fragrant and slightly golden.
Add the squid and stir-fry for 2–3 minutes or until it turns opaque and is cooked through. (Be careful not to overcook—it can become rubbery.)
Push the squid to the edges of the pan and add kimchi and spring onions to the center. Stir-fry for 1–2 minutes to allow flavors to develop. Add your preferred seasonings.
Mix everything well until evenly coated and combined.
