How To make Salt and Pepper squid
Today we have a Chinese seafood recipe on the menu. Salt and Pepper squid (椒盐鱿鱼)! We will be learning how to make ultimate Chinese salt and pepper squid. This salt and pepper squid is a popular Chinese seafood recipes typically available at dim sum places. This calamari recipe is a crispy squid recipe with a simple seasoning.
For this recipe you can use any part of the squid to make this Chinese salt and pepper squid.

Salt & Pepper Squid | 椒盐鱿鱼
Ingredients
✿ 250 - 300 Grams Squid
✿ 1 Tablespoon Shaoxing Wine
✿ 1 Egg
✿ Salt & Pepper
✿ 30 Grams Cornstarch
✿ Cornstarch/Tapioca Starch for coating
✿ 4 Garlic Cloves
✿ 1 Red Chili Or Jalapeño
✿ 1 Red Pepper
✿ 2 Spring Onions

If using fresh squid, clean and cut in desired pieces.
(Score the squid if preferred)
*You can use frozen or any of your favorite squid for this recipe.
Season the squid with salt & pepper. Add the egg, shaoxing wine and cornstarch. Mix well.
Coat the squid with cornstarch or tapioca starch and set aside.
Prepare the other ingredients. Since I can’t find red chili pepper I used jalapeño for the heat and a red pepper for the color.
Use desired amount of chili pepper/jalapeño. Cut in slices or strips. Mince the garlic and cut spring onion in tiny pieces.
Deep fry the squid on medium - high heat until golden brown and crispy.
Pan fry the minced garlic and peppers for 1 - 2 minutes. Add the spring onion and squid. Combine well and it’s ready to serve.
Serve with a bowl of white rice!
TIPS & NOTES
✿ Use fresh squid or frozen squid.
✿ If you can’t find red chili pepper like me, use a Jalapeño pepper instead for the heat.
✿ Red Pepper is optional. I used the red pepper just for color
