What Is Sweet And Sour Pork?

Today we will learn a Dim Sum - Take Out recipe. Sweet and sour pork or in Chinese gu lou juk 咕噜肉 /
酸甜咕噜肉. It is a popular item on the menu in restaurants, so today I will teach you how to make homemade sweet and sour pork!

How To Make Sweet And Sour Pork

There are many different versions on how to make sweet and sour pork. The version I will be teaching you today is a Cantonese Sweet And Sour Pork With Pineapples. There are also many different versions on how to make the sweet and sour sauce . I will show you a simple and easy Chinese sweet and sour sauce . You can make this sweet and sour sauce to use as a dipping sauce, but we will be using it for our sweet and sour pork recipe. Adjust the sauce to your own personal preferences. Instead of pork you can also substitute the pork and use chicken as well to make sweet and sour chicken!

Sweet And Sour pork | 咕噜肉

Ingredients

✿ 350 Grams Pork Shoulder
✿ 2 Cups Bell Pepper
✿ 1 Cups Pineapple (Optional)
✿ 1 Cup Onion
✿ 2 Minced Garlic

Marinade:
✿ 1 ½ Tablespoon Light Soy Sauce
✿ Pepper (optional)
✿ ½ Egg
✿ 1 Tablespoon Cornstarch

Coating:
✿ ½ Cup Plain Flour
✿ ½ Cup Cornstarch 
✿ ½ Teaspoon Baking Soda
✿ Salt & Pepper

Egg Batter:
✿ 1 Egg + Remaining ½ egg from the marinade

Sauce:
✿ ¼ Cup Ketchup 
✿ ¼ Cup Vinegar
✿ ¼ Cup Water
✿ ¼ Cup Sugar
✿ Pinch Of Salt
✿ 1  Tablespoon Cornstarch

Prepare Pork

Cut & Marinate Pork For 30 Min.

Coat Pork

Coat With Flour And Egg

Make Sauce.

Fried-Sweet-And-Sour-Pork

Fry

Fry Pork On Medium - High Heat, 2 Times.

Cook Vegetables

Stir Fry Vegetables.

Add Sauce

Cook Sauce Until Thickened.

Add Chicken & Pineapple

Coat Chicken With The Sauce.

Cut pork shoulder in small squares.
I used pork shoulder for this recipe, but you can also use pork butt.

Add all the marinate seasoning to the pork and let it marinate pork for 30 min.


Prepare the other ingredients. Bell pepper, onion and pineapple cut in big pieces. Mince garlic.
Adjust ingredients amount to personal preferences


For the egg batter I used 1 egg and added the remaining ½ egg that I used for the marinade.

For the coating add everything together and combine.



Coat the pork with the flour mixture. Dip in egg and coat one more time in the flour mixture.



For the sauce combine all the ingredients together and stir until combined.



Carefully place the coated pork in the oil. Deep fry on medium - high heat for 5 minutes. Remove from the oil and let it rest for 5 minutes.

Deep fry the pork for a 2nd time for another 5 minutes or until golden brown and crispy.



In a pan add a little bit of oil. Add the garlic and vegetables. Stir fry vegetables for 4 - 5 minutes.

Add the sauce and cook until thickened.



Add pineapples and fried pork. Give it a quick stir until everything is coated.
Don’t cook too long or else the pork will turn soggy

TIPS & NOTES
✿ If you prefer the sauce more sweeter, add more sugar to the sauce
✿ I am using pork shoulder but you can also use pork butt
✿ Adding cornstarch to the coating mixture makes the coating extra crispy.
✿ Once you added the pork to the vegetables and sauce, give it a quick stir until coated. Don’t stir for too
long or else the pork will turn soggy.
✿ Best eaten hot and the same day.
