What is Lao Po Bing 老婆饼

Lao Po Bing - 老婆饼, literally translated it means wife cake. Or they’re also called Sweetheart Cake. A popular chinese bakery pastry. These pastries are flaky filled with a sweet chewy filling made with glutinous rice flour, sesame seeds and pieces of wintermelon.

How To Make Wife Cake

My father showed me this recipe a few years ago, he used to make them for us when we were little, they were always super yummy! When I bake these Wife Cake at home it makes the whole house smell like a sweet bakery.

This pastry is made out of 2 types of dough which makes it nice and flaky. Filled with a yummy sweet sticky rice filling. We will be making the Hong Kong style wife cake which has a sweet winter melon inside the filling. The sweet winter melon adds a nice texture to the pastry.

Chinese Wife Cake | 老婆饼

Wife Cake Ingredients

Wife Cake Filling:
✿ 165 Grams Cooked Glutinous Rice Flour
✿ 250 Grams Sugar (To Taste)
✿ Candied Winter Melon (Optional)
✿ Sesame Seeds (Optional)

Wife Cake Crust - Oil Dough:
✿ 190 Grams Flour
✿ 110 Grams Butter

Wife Cake Crust - Water Dough:
✿ 315 Grams Flour
✿ 145 Grams Butter
✿ +/- 95 Milliliters Warm Water
✿ 1 Tablespoon Custard Powder (Optional)

Wifey Cake Crust - Oil Dough

For this pastry we need to make 2 types of dough. Let’s start with the oil dough. Knead flour and butter together until a dough forms. Wrap it up and set aside.

Wifey Cake Crust - Water Dough

For the water dough knead flour and butter together until crumble. Then slowly add warm water and knead until a smooth and non sticky dough forms.
*Adjust the water if dough is too dry or too wet.
Wrap it up and set aside as well.

Filling

Use cooked glutinous rice flour or get the regular glutinous rice flour and cook it on the stovetop for about 5 minutes. Transfer it to a bowl. add sugar to taste and combine. Slowly add HOT water until a paste forms. Similar to a thick pudding consistency.

Chop wintermelon in tiny pieces and add it to the sticky rice filling. Optional: Add sesame seeds.

Layer The Dough

1. Roll the water dough in a string and cut it in desired sizes.
2. Roll the oil dough in a string as well and cut the same amount of pieces as the water dough.
* The oil dough pieces should be HALF the size of the water dough pieces.
3. Take a piece of each dough and carefully press them flat.
4. Place the oil dough inside the water dough and carefully press it flat again. (Make sure the oil dough stays inside the water dough)
5. Fold it in half and repeat with all of them
6. Roll the dough out vertically, then roll it into a sausage shape.
7. Place the dough with the line facing up. Press down on the middle with the side of your hand. Lastly fold from the left side 2 times toward the right. It’ll look like a ball now. Repeat with all.
8. Flatten the dough a little with a rolling pin. Flip it around and then roll the edges thin. Repeat with all.
*Make sure to keep the middle thick

Divide the filling for the pastry. * Use a generous amount of flour to prevent the filling from sticking. Rill the filling into a ball and wrap the filling inside the dough. Carefully flatten it with a roller to shape it into a pattie.


Brush egg yolk on top of each pastry. Use a knife to cut 2 small lines in the middle. This will help to let the steam out and keep the pastry from bursting.





Bake at 360F for 15 - 18 minutes until nicely golden brown. Transfer them to a cooling rack and let them cool down before consuming.

TIPS & NOTES
✿ If you can find cooked glutinous rice flour (Gao Fen) You don’t need to cook it before using. If you can’t find Gao Fen, follow the recipe according instructions.
✿ For the filling you can adjust the sugar to your personal preferences.
✿ Candied winter melon and sesame seeds are optional ✿◕ ‿ ◕✿
