What Are Amber Walnuts?

Amber walnuts are a Chinese version of candied walnuts. In this post I will teach you my version of candied walnuts. These crunchy sugar coated walnuts will have a nice sugar coating. They won’t stick to each other and are super crispy!

How To Make Walnuts Crispy?

Have you ever wondered how to make walnuts crunchy ? The process for these walnuts takes a little bit longer than the western version. This Asian version gives you a very crispy evenly coated walnut. These nuts are deep fried after the sugar coating for an extra crispy walnut.

My papa used to make this often and I loved to snack on these. These candied walnuts are super yummy to snack on or to add it to desserts. Do you want to learn how to make Chinese candied walnuts?

Amber Walnuts

Amber Walnuts Ingredients

✿ 20 Grams White Sesame
✿ 300 Grams Walnuts
✿ ⅛ Teaspoon Salt
✿ 100 Grams Sugar
✿ 2 Tablespoons Maltose
✿ 15 Grams Water

Toast Seeds For 5 -7 Min.

Candied-Walnuts

Rinse Walnuts

Rinse Walnuts With Water.

Sugar Coating

Cook With The Sugar Mixture.

Deep Fry On LOW Heat.

Garnish

Sprinkle With Toasted Sesame Seeds.

Chinese Style Candied Nuts

Toast sesame seeds for 5 - 7 minutes until golden brown and fragrance.




Rinse the walnuts with some water.

In a pan heat up some oil on low - medium heat for deep frying later. In another pot bring some water to a boil. Add the salt and walnuts. Bring it to a boil and let it simmer for 3 - 5 minutes until the water turns dark. When done, drain the water.


In a nonstick pan add sugar, maltose and water. Melt the sugars on low- medium heat. Once dissolved cook until the water is evaporated. Small bubbles will form and it will turn light brown. Add the walnuts and give it a quick stir until all the walnuts are coated.



Transfer the walnuts to the preheated oil. Do not stir yet.
Fry the walnuts on LOW HEAT for 3 - 5 min until light brown. Give it a quick stir and fry until golden brown and crispy. When ready remove from the oil.





Spread it out on a baking sheet. Sprinkle the toasted sesame seeds on top while the nuts are still hot. Let it cool down.

When cooled down use a paper towel to dap off the excess oil. The nuts are ready to snack on or use it to add to your desserts! ✿◕ ‿ ◕✿

TIPS & NOTES
✿ Boiling the walnuts will remove the bitter taste from the walnuts
✿ Heat up the oil while you’re boiling and coating the walnuts with sugar. The oil will be ready by the time for deep frying. If you wait to heat up the oil after the nuts are coated with sugar, the sugar will get hard and the nuts will clump together.
✿ Oil needs to be heated on low. If the oil is too hot the sugar coating around the walnuts will burn.
✿ Don’t stir the walnuts for the first few minutes when you place it in the oil, or else you’ll stir off the sugar coating.
