Today we will be learning how to make a Chinese Style Beef Stew, 炖牛肉. This is one of my favorite dishes to have during the winter. When I was growing up I remember my mother making it for us on a chilly fall/winter day. My mother didn't make it too often because it does take a long time to make, but this also made it special for me. I can still remember the smell coming from the kitchen when she would start cooking. This Beef Stew with daikon - 萝卜炖牛肉 is a nice comfort dish that is great to serve with rice or noodles.

Beef Stew - 萝卜焖牛腩

Chinese Beef Stew Ingredients

✿ 2 Tablespoons Chu Hou Paste
✿ 700 Milliliters Water
✿ 2 Teaspoons Light Soy Sauce
✿ 2 Teaspoons Oyster Sauce

✿ 400 - 500 Grams Beef Stew Meat
✿ 1 Daikon
✿ 2 Spring Onions
✿ 1 Piece Of Ginger

✿ Cornstarch

For this recipe you can use daikon or korean radish. Peel and cut in desired sizes. Cut the spring onion in small pieces.







Blanch the meat to remove any impurities. Bring a pot of water to boil and add the meat. After adding the meat, bring it to a boil again. Once boiling discard the water and rinse the meat with cold water. Set meat aside until use.




Add a little oil to the pan. Cook the ginger and spring onion until aromatic. Add the meat and stir to combine.

Make a hole in the middle and add the chu hou paste. Stir fry the sauce for 1 minute, then mix everything together.




Add water and bring it to a boil. Once boiling, place the lid on top and let it simmer for 1 hour.






After 1 hour add the soy sauce and oyster sauce. Then add the daikon and bring it to a boil. Place the lid on top and let it simmer for another 45 minutes or until the meat is soft and tender.




When the meat is soft and tender add cornstarch slurry to thicken it. Slowly add the cornstarch slurry until you’ve reached your desired thickness.

* I used 1½ tablespoons cornstarch + 2 tablespoons water. I prefer the stew not too thick but also not too runny.

This is a delicious stew to serve with rice or noodles.

TIPS & NOTES
✿ Cook the stew longer for a more tender meat.
✿ Add some chili oil to it when serving if you love spicy food!
