Lotus Root Soup | 荷兰根汤

Lotus Root Soup Ingredients

✿ 400 - 500 Grams Lotus Root
✿ 500 Grams Pork Ribs
✿ 100 Grams Peanuts
✿ 1 Carrot
✿ 6 - 8 Red Dates
✿ Water
✿ Salt (To Taste)

Prep Ingredients

Cut Ingredients.

Lotus Root Soup Recipe

Simmer

Simmer Soup For 2 - 3 Hour.

Let's prep all our ingredients. Cut vegetables in desired slices / pieces.
*Make sure to wash the lotus root after cutting.
Remove the pit inside from the dates.

Blanch the pork ribs. Add ginger and spring onion to the ribs. Bring it to a boil. Remove the scum. Remove pork ribs. Rinse with cold water.

In a pan add the pork ribs, all the cut vegetables and a piece of ginger. Add water until everything is covered.

Cover with a lid and bring it to a boil. Let it boil for 30 Min. Then reduce the heat. Let it simmer for 2 - 3 hours.

Optional: Remove the oil. Season to taste with salt

Serve while hot! ✿◕ ‿ ◕✿

TIPS & NOTES
✿ The more carrots you add the sweeter the soup.
✿ Season to taste with salt.
✿ Feel free to replace the pork ribs with other poultry.
