Today I will show you another Dim Sum Recipe. Let’s learn how to make scallion pancakes. Also known as Cong You Bing 葱油饼 or green onion pancake.
What is a scallion pancake?
What is a scallion pancake? Scallion pancakes are a popular dim sum item at restaurants. You will either see them as an appetizer or as a side dish. Chinese scallion pancakes, 葱油饼, are also a popular street food. Green onion pancakes have a flaky and crispy outside with a chewy inside. It is a Chinese version of flatbread. The flaky scallion pancake is made by the oil and spring onion in between the layers. The spring onion makes the scallion pancake very aromatic. You can serve these Chinese scallion pancakes as a snack or add it to your lunch/ dinner!

Chinese Scallion Pancakes | 葱油饼
Scallion Pancake Ingredients
Flour Oil:
✿ ¼ Cup Flour
✿ ¼ Cup Oil
✿ 1 Teaspoon Pepper
✿ 5 Spice Powder
✿ Salt
Dough:
✿ 300 Grams Flour
✿ 120 Milliliters Hot Water
✿ 60 Milliliters Room Temp Water
✿ Pinch Of Salt

Scallion Pancake Dough
To make the dough first add hot water to the flour. Stir with chopsticks to mix. Add the room temperature water. Mix again.
Start kneading with your hands. Knead until a dough forms. When dough forms knead 5 more minutes until smooth. Let the dough rest for 30 Min.
In the meantime let's prepare the other ingredients! Cut spring onion in small pieces.
Flour Oil
Let's make the flour oil. Combine all the ingredients for the flour oil in a pan. Cook the mixture on low heat. Mix until smooth. Cook until slightly thickened.
Divide the dough in preferred amounts. I divided mine in 6 pieces. Take a piece of dough . Coat with some flour. Roll it out in a big rectangle +/- 1 - 2 mm thick. Brush a layer of the flour oil on top of the dough. Spread a layer of spring onion on top. Roll it up into a string. Pinch the sides to close it.
Then roll up the string into a circle. Tuck the end underneath. Roll each scallion pancake into a thin pancake/ desired thickness.
Pancakes are ready to cook! Heat up pan with some oil. Cook pancake both sides until golden brown.

TIPS & NOTES
✿ To store. Place the pancakes on parchment paper and stack them on top of each other. Freeze the uncooked pancakes for up to 3 months.
