Gevulde Koek Ingredients

Almond Paste:
✿ 150 Grams Almond Flour
✿ 150 Grams Sugar
✿ ½ Egg
✿ Water
✿ Lemon Zest

✿ 1 Egg
✿ Almonds

Dough:
✿ 100 Grams Sugar
✿ 160 Grams Butter
✿ 300 Grams Flour
✿ 1 Egg
✿ Pinch Of Salt
✿ ½ Teaspoon Lemon Zest
✿ 1 Teaspoon Baking Powder

Make Cookie Dough

Knead Until Dough Forms.

Almond-Paste-Marzipan

Make Almond Paste

Mix Until Pipable Consistency.

Cut Dough

Cut Out Circles.

Shape, Fill With Paste

Bake 400F | 15 Min.

Cool Down

Cool Down Completely.

For the cookie dough, roughly mix flour and cold butter until crumbly. Add all the other ingredients and mix and knead until a dough forms. Wrap up. Refrigerate for 1 hour.



To make the almond paste, pulse blend almond flour and sugar until fine. Add lemon zest and egg. Pulse blend until it comes together. Transfer to a bowl. Add water until a pipeable consistency. Place in a piping bag.




Roll out dough approx. 2-3MM thick. Cut out circles.
Pipe almond paste in the middle. Brush edges with some water. Cover with another piece of dough.

Press the edges with a fork. Press an almond in the middle .

Brush with egg wash
Bake 400F | 15 Min

Cool down on a cooling rack
