French Macaron - Mocha MAcaron
French Macaron Ingredients
Ganache:
✿ 1 Cup Chocolate Chips
✿ 1 Cup Heavy Cream
✿ 2 Teaspoons Espresso Powder
Macaron:
✿ 100 Grams Almond Flour
✿ 75 Grams Powdered Sugar
✿ 1 Teaspoon Espresso Powder
✿ 70 Grams Egg White
✿ 70 Grams Sugar

To make the macaron batter separate yolks from the whites. Use the yolks for other dishes. Beat egg whites until stiff peaks while adding sugar in 3 batches.
Combine all the powders. Sift in 1/3 of the powder mixture into the stiff egg white mixture. Fold to combine. Repeat
Fold until lava consistency.
Pour in piping bag. Pipe the shells. Tap sheet to release air bubble.
Bake at 320F for 16 - 18 Min. Baking time and temp. varies for everyone. *Adjust if needed.
Let's make ganache for the filling! ^-^
Mix HOT Heavy cream with the chocolate until combined.
Set aside until use.
Once the shells are done, Cool down completely.
Remove shells. Match shells and use your favorite filling!

TIPS & NOTES
✿ *Baking time and temp. varies for everyone. *Adjust if needed. If shells are cracking the temperature might be too high.
✿ For other flavored shells, leave out the espresso powder and use food coloring and or flavoring.
