Lemon Crinkle Cookie

Lemon Crinkle Cookie Ingredients

✿ 150 Grams Sugar
✿ Lemon Zest
✿ 70 Grams Butter
✿ 1 Teaspoon Vanilla Extract
✿ 2 Eggs
✿ 2 Tablespoons Lemon Juice
✿ 240 Grams Flour
✿ 1 Teaspoon Baking Powder
✿ 1 Teaspoon Cornstarch
✿ ¼ Teaspoon Salt

Add sugar and lemon zest (from 2 lemons) in a bowl. Rub zest into sugar to release the fragrance.

Add melted butter and vanilla extract. Whisk to combine. Add Eggs and whisk again. Sift in the flour. Mix with a spatula until combined. Cover and refrigerate for 2 hours.


Take approx. 1 tablespoon of dough. Shape in a ball. Coat with sugar then coat in powdered sugar. Place them on a baking sheet lined with parchment paper.

Bake at 350F for 8 - 10 Min.

Cool down on cooling rack.

TIPS & NOTES
✿ When rolling the cookies, coat hands with some powdered sugar to prevent sticking
