What Is Ichigo Daifuku
Daifuku - 大福 Also known as Daifukumochi - 大福餅 is a popular Wagashi - 和菓子 in Japan.
There are a lot of varieties of daifuku, the one we will be making today is Ichigo daifuku イチゴ大福. Or in an easy way you can call it strawberry mochi. It contains of a strawberry inside with a sweet filling surrounded with a chewy mochi dough on the outside. In this video I will show you how to make ichigo daifuku - 大福餅の作り方
How To Make Strawberry Mochi
For the filling I used sweetened white bean paste but feel free to use your favorite paste for your strawberry mochi. To make the mochi I used strawberry milk, but regular milk works as well for the mochi dough. Of course you can also use red bean paste to make strawberry red bean daifuku or red bean mochi. You can be very creative with the recipe and add flavors to the mochi like matcha, chocolate to make strawberry matcha daifuku or strawberry chocolate daifuku.

Strawberry Daifuku
Ingredients
✿ 100 Grams Glutinous Rice Flour
✿ 120 - 140 Milliliters (Strawberry) Milk
✿ 8 Strawberries
✿ Sweetened White Bean Paste
✿ Oil
✿ Cornstarch For Dusting
✿ Food Coloring (Optional)

Add 120 Milliliters strawberry milk to the glutinous rice flour and whisk until smooth.
Add more strawberry milk if needed until thick and runny.
Oil a steamable plate or bowl and strain mochi mixture into steamable plate or bowl.
Steam 20 - 25 minutes.
Prepare 8 strawberries. Wash strawberries, remove stem and dry.
Scoop about 1 Tablespoon of sweetened white bean paste and roll it into a ball.
Flatten the white bean paste and place a strawberry in the middle. Push the bean paste around the strawberry.
When mochi dough is done steaming
Oil working space. Knead mochi dough until smooth and stretchy. 🔥 Careful it might be hot in the beginning
Optional: add pink food coloring.
Divide in 8 equal pieces.
Depending on the size of the strawberry you might adjust the amount.
Coat the top of the mochi dough with cornstarch. Flatten the mochi dough a little. Flip it around and place the strawberry with white bean paste in the middle. Close the mochi.
If it’s sticky coat outside with more cornstarch and shape into a ball.
TIPS & NOTES
✿ You can use regular milk instead of strawberry milk (add sugar to the mochi dough if preferred).
✿ Knead mochi dough until stretchy for a more chewy texture.
✿ To store wrap in plastic and store in airtight container so the mochi dough won’t dry out.
✿ Best if eaten the same day.
