Cold Marinated Chicken Feet | 白雲鳳爪

Cold Marinated Chicken Feet Ingredients

✿ Chicken Feet
✿ Ginger
✿ 5 - 6 Star Anise
✿ 2 Bay Leaf
✿ 1500 Milliliters Water

✿ 4 - 5 Teaspoons Salt
✿ 1 Teaspoon Chicken Powder
✿ 1 Tablespoon Shaoxing Wine

✿ 2 Cups Vinegar

Dim Sum Chicken Feet

Clean Chicken Feet

Remove Nails And Wash.

Make Brine

Season To Taste.

Cook

Cook Until Desired Texture.

Soak

Soak In Brine.



Clean the chicken feet. Remove the nails and rinse chicken feet.


In a pan add the water, ginger, bay leaf and star anise. Bring it to a boil. Once boiling let it simmer for 30 Min.

Turn off the heat. Season to taste with salt and chicken powder.

*It has to be on the salty side. Let it cool down completely.

Add Chicken feet in a pan. Add enough water to cover all the chicken feet. Bring to a boil.

Once boiling simmer for 40 - 60 Min depending on the texture. Place in an ice bath. Let it sit until cold.

Rinse the chicken feet. Add water until chicken feet are covered and add vinegar. Soak for 1 hour
* This will whiten the chicken skin and make it crispy.

Drain vinegar water.
Optional: Rinse and soak again for 1 hour in just water this time.

Pour brine until chicken feets are covered. Refrigerate overnight. Serve cold the next day with a sweet vinegar sauce.

✿ Adjust seasoning for the brine to personal preferences
✿ I simmered my chicken feet for 40 Minutes for a firm skin
