Today we will learn to make one of my favorite and popular dim sum items, how to make Cheung Fun!

What Is Cheung fun?

Cheung fun is also known as rice noodle rolls. Shrimp cheung fun 鲜虾肠粉 is a steamed dish. Cheung fan are usually served during dim sum as a small snack. These rice noodles rolls are made of a sheet of rice noodles rolled up with different fillings inside. They’re soft, smooth and a little bit chewy. Usually served with a sweet soy sauce.

Today I will show you the basic cheung fun recipe. There are different varieties of steamed rice noodle rolls recipe. The version we will be making today is shrimp rice rolls ! Feel free to use other fillings like bbq pork, dried shrimp and spring onion to make your own customized steamed rice noodle rolls!

Steamed Rice Noodles Rolls

Steamed Rice Noodles Rolls Ingredients

Sauce:
✿ 2 Tablespoon Light Soy Sauce
✿ 4 Tablespoons HOT Water
✿ 1 Teaspoon Sugar
✿ 1 Teaspoon Dark Soy Sauce
✿ ½ Teaspoon Sesame Oil

✿ 60 Grams Rice Flour
✿ 20 Grams Tapioca Starch
✿ 25 Grams Wheat Starch
✿ 250 Milliliters Water
✿ Pinch Of Salt
✿ 1 Teaspoon Oil

Prepare The Batter.

Make Sauce

Combine Sauce ingredients.

Serve Hot

Garnish With Spring Onion.



Add the flour, starches and salt to a bowl. Whisk to combine. Add water and whisk until clump free. Add oil and whisk again until combined.


Apply a thin layer of oil on a steamable tray or plate. Bring a pot of water to a boil. Place the tray or plate inside.

*Mix mixture every time before use.

Pour a thin layer of mixture on the plate. Swirl around to coat evenly. Steam for 1 minute. Add favorite filling. Steam for 2 more minutes.




Use a scraper to roll it up.

*Apply some oil on the scraper to prevent sticking.






To make the sauce combine all the ingredients together.






Pour over freshly made rice noodles and garnish with spring onion.
