Tomato Beef Stew Ingredients
βΏ 1 Cinnamon Stick
βΏ 2 Bayleaf
βΏ 2 Star Anise
βΏ 1 Dry Tangerine Peel
βΏ 2 Tablespoons Tomato Paste
βΏ 1 Tablespoon Chu Hou Paste (Optional)
βΏ Shaoxing Wine (Optional)
βΏ Seasoning (To Taste)
βΏ 800 Grams Stew Meat (Beef Chuck/Shank)
βΏ 5 Slices Ginger
βΏ 7 - 8 Tomatoes
βΏ 1 Onion
βΏ 1 - 2 Potatoes (Optional)
βΏ 4 Garlic Cloves
βΏ 2 Spring Onion

Prep Ingredients
Cut Ingredients.
Blanch Meat
Remove Impurities.
Cook Stew
Simmer For 1 Hr 30 Min.
Add Potatoes
Serve Over Hot Rice.
Slice a cross on the skin of the tomatoes. Pour hot water over the tomatoes. Let it sit for approx. 2 - 5 minutes.
Letβs prep the other ingredients. Cut potatoes and onions in desired sizes.
Peel the skin off the tomatoes. Cut tomatoes in chunks as well. Mince Garlic.
In a pot add water, ginger, spring onion, some shoaxing wine and the beef. Bring it to a boil. Once boiling remove the scum. Let it simmer for 3 min. Drain and rinse the beef.
In a pan add some oil. Add minced garlic, piece of ginger, and onions. Cook until fragrant. Add the spices, tomato sauce and chu hou paste. Fry sauce for 2 min then mix
Add tomatoes* and the beef and mix.
*Save 1 cup of tomatoes for later.
Close with a lid. bring it to a boil. Once boiling mix and season to taste with other seasoning if preferred. I added some soy sauce. Lower heat to low-medium. Simmer for 1Β½ Hour. Remove the spices.
Add in remaining tomatoes and potatoes. Mix to combine.
Cover and cook for 10 - 15 min Or until potatoes are done
Serve over Hot rice and Enjoy!! βΏβ βΏ ββΏ
TIPS & NOTES
βΏ Feel free to use canned tomatoes instead of fresh tomatoes.
βΏ Adjust seasoning to personal preference.
